This will be a short one, but it needs to be said. Just when I thought I’d tasted all that brunch has to offer - from pancakes to waffles to French toast and even the useless cronut-along comes this gem of a game changer : The Mighty Dutch Baby!


Fresh off the high from Gunshow the night before, we were only in the market for a light breakfast, just something to tide us over until our 5 PM reservation at Georgia Boy. The weather was perfect, a steady 78 degrees, so when we stumbled upon Saints + Council in Midtown Atlanta’s Colony Square and saw the option to dine al fresco, we jumped on it.

Our server Yasir was fantastic and suggested we try their specialty: Dutch babies. Gastro Astro went classic with berries, while I opted for the chicken with a spicy twist.


Details here are secondary. What matters is that you need to track down a Dutch baby ASAP and try it. And if it’s your first, even better if it’s at Saints + Council. Trust me, your quality of life will increase ten-fold.


Need a soundtrack? Start with “Don’t Know Much” by Linda Ronstadt and Aaron Neville—that was my mood after the first bite. Follow it with “Neverender” by Justice and Tame Impala, because we collectively never wanted this experience to end. And… it almost didn’t.



This Dutch baby was massive. We were stuffed but had no intention of stopping until our cast-iron skillets were practically licked clean.

At one point, we seriously considered canceling our dinner reservations just to order another Dutch baby and call it a day. In hindsight, I’m glad we didn’t, but it was touch-and-go for a moment.


So, if you ever find yourself in Colony Square, don’t pass this up. And then message me after so we can geek out together about how just darn good this mother-flippin dish is.
